My trout recipe was too spicy, but the potatoes on the side came out great! Peewee potatoes are cute tiny little potatoes!
Roasted Peewee Potatoes with Garlic and Thyme
Ingredients
1.5 pounds Melissa’s Peewee Potatoes, halved
2 tablespoons extra virgin olive oil
1 teaspoon fresh ground black pepper
8 cloves garlic
6 sprigs fresh thyme
Method
Preheat oven to 425°F. Combine all ingredients in baking dish and mix well. Bake, uncovered, for about 10-15 minutes or until potatoes are tender and browned. Gently stir once or twice during cooking. Remove from oven and serve warm.
