Ok, I have caught up with my recipes I made the last two days! Phew!
Orecchiette with basil
14 ounces Orecchiette pasta
1.5 ounces walnut kernels, chopped
1 basil sprig, chopped
2 garlic cloves, finely chopped
3 tablespoons grated Parmesan
3 tablespoons Extra Virgin Olive Oil
salt & pepper
1. Cook the orecchiette al dente in plenty of slightly salted boiling water.
2. Five minutes before the pasta is ready, heat oil in a pan, add the finely chopped garlic and, after a couple of minutes, the walnut kernels also chopped. Brown for a few minutes then add the chopped basil, season with a pinch of salt and a grind of pepper, mix well add the pasta, which you will have drained al dente.
3. Fold the pasta in the sauce, remove the pan from the heat, sprinkle with parmesan and serve warm.
